<p>Following a tour of this stunning historic site from the 3rd century BC and its many intact and colorful mosaics, recline on Moroccan Kilms in the shadow of the ancient Roman ruins of Volubilis while sampling traditional Roman recipes as recorded in the Latin texts of Apicius and Cato.</p>

<p>Roman cuisine relied on exclusively local ingredients such as olive oil, wine, soft fresh cheese, game birds, hearty fruits such as pears and melons, honey, and fresh herbs- and of course, omitted new World ingredients such as potatoes and tomatoes. The picnic will include 3 vegetable/ pulse/ fruit dishes, one meat, and one dessert, as well as a selection of olives and bread and include a bottle of refreshing Moroccan Gris wine.</p>

<p>Moving onto the historic city of Moulay Idriss Zerhoun, Morocco.s most spiritual centre you will see the local olive groves and learn about the methods of harvesting and pressing the olives to create the dark and fruity oil that is the base of culinary and medicinal and cosmetic tradition countrywide. Following the tour of an oil mill you will enjoy an olive oil tasting. Compare the most representative oils and learn how to sense the bitter, spicy, or fruity sensations of the oil, as well as the other characteristics of olive oils. You will learn about the different kinds of oils and their labels . organic, virgin, extra virgin, single olive variety, acidity percentage, origin, etc. . as well as the benefits of olive oil for health and culinary uses.</p>

<p>We’ll visit three different food souks allowing the chance to try traditional Moroccan street food  including dried meats, milawi, harsha, briwats, spicy sardines, spicy potato cakes, soups, olives and more. At the honey souk we’re you’ll be able to taste an array of delicious wild honeys, discuss their flavors and health-giving properties and find out why honey is so important in Moroccan cooking and Islamic culture.</p>

<p>We’ll investigate traditional cooking methods by visiting a furnatchi where the water for the communal bath house ‘hammam’ is also heated, and a 400 year old ‘furan’ or communal oven and bakery.</p>
<p>&nbsp;</p>
<p>Discover the world of spices and their uses and the secrets of the male-oriented domain of the tea den under the  guidance of a culinary leader and story-teller.</p>
<p>&nbsp;</p>

<p>You might try cooking ‘on-street’. Shop and fill up a terracotta urn ‘tanjia’ to have embedded in the hot ashes of the furnachi for a rich and spicy Moroccan casserole, followed by a tasting tour.</p>

<p>Or learn to bake bread in the 400 year old community oven with the baker overseeing your hands-on efforts. Take your hot bread to the honey souk to try it with 8 artisanal wild honeys, aged butter or khlia, spicy dried beef. </p>

Meet the women in the Middle Atlas town of Ribat El-Kheir to learn an appreciation for the art and wonderful taste of hand-rolled couscous.</p>
<p>&nbsp;</p>
<p>Just an hour&#8217;s drive from Fes, enjoy the beautiful scenery of the Atlas foothills en route to get to the town surrounded by mountains and lush agriculture. The town has a fascinating history. An assassination attempt 50 years ago on the previous King of Morocco life was found to be have been planned by a tiny faction from a then nearby military base. The town was ex-communicated for 30 years thus giving the innocent residents few opportunities to provide for their families.</p>
<p>&nbsp;</p>
<p>The Women&#8217;s Association who teach this traditional skill and who also run their bakery is one example in the town which is creating opportunities and increasing the standard of living for the residents. It is also possible to visit a weaving association overlooking the mountains.</p>
<p>&nbsp;</p>
<p>Learn the secrets of a good Moroccan couscous while at the same time experiencing traditional rural life. Visitors roll their own couscous from scratch with the women of the association and then cook and eat it for lunch. After lunch take a walk along the ridge to see the donkey-powered olive press and have mint-tea and an olive oil tasting with the owner.</p>

The reds of the Volubilia label are produced from a mixture of around 50% cabernet sauvignon with Syrah, Tempranilla and Mourvedre.</p>

<p>You will enjoy the unusual privilege of the winemaker himself driving you around the vineyard and then talking you through a tasting session which may even include a decoupage before your very eyes. This is an exciting opportunity for wine lovers to discover the “New Morocco”.</p>

<p>The farm also produces an award-winning olive oil &#8211; and not just any award: Volubilia Extra Virgin gained the title Best Olive Oil in the World in 2006.</p>
